Lime & Coconut Popsicles

Yields-6 Servings

 1 can coconut milk
 4 limes, juice & zest
 4 sticks lemon grass, washed
 ¼ cup honey, optional

1. Whizz the coconut milk with the lime juice, half the zest and honey ( if using - I didn't because I like the refreshing tartness of the lime) in a blender
2. Pour into moulds and insert the lemon grass int the middle, use a peg to hold the lemongrass stick in place.
3. Freeze for 8 hours.
4.Serve garnished with extra lime zest.

Coconut, Lime & Lemongrass Popsicles

Lemon & Honey Yoghurt Popsicles with Pistachio Nuts

 500 ml Lemon & Honey Yoghurt
Garnish
 50 g pistachio nuts, shelled & chopped

1. Fill moulds with yoghurt, saving 100ml yoghurt
2. Freeze for 8 hours.
3. Unmould mollies, and dip in remaining yoghurt and sprinkle with pistachio nuts.
4. Place on baking paper and freeze again for 10 minutes.
5. Serve

 2 bottles drink the Duchess Alcohol-free `Gin & Tonic
 ½ green melon, sliced thinly
 610 mint leaves, washed

1. Place a slice of melon, and 1 or 2 mint leaves in each mould.
2. Fill with the Drink the Duchess, or make gin and tonic, and pour into molds.
3. Freeze for 8 hours.
4. Serve and say cheers to Sober-October

 ½ green melon, sliced thinly
 610 mint leaves, washed

Elderflower & Apple Ice Lollies

 500 ml Ginger Ale or Ginger Beer
 1 Green Apple, thinly sliced

1. Mix the cordial and soft drink in a jug.
2. Place slices of apple in the moulds, and pour in the soft drink.
3. Freeze foe 8 hours, unfold and serve.
