Cherry, Date & Coconut Granola

I’m not one for hyperbole and exaggeration. You know the ones I mean, blog post headings: “the best granola recipe in the world, ” and big claims “you won’t find a better recipe,” etc. Not my thing usually. But, with this recipe I’m willing to make an exception. It really is that good, if you like granola that this, if not, then skip on by to the cake recipes. If you’re here for the granola, you won’t be sorry!

Cherry, Date & Coconut Granola

The date syrup can be replaced by brown rice syrup, or honey

 2 cups packed coconut flakes 

2 cups rolled oats 

1 cup flaked almonds 

1/4 cup date syrup 

1/4 cup maple syrup

1/4 light olive oil or coconut oil 

Juice and zest of 1 large orange 

2 teaspoons vanilla extract 

Big pinch sea salt flakes 

1 cup dried cherries ( or cranberries )

  1. Toss all the ingredients except the cherries together in a large bowl and mix well to combine.
  2. Preheat the oven to 180oC
  3. Spread the granola mixture evenly over a large baking tray ( you may need to divide the mixture in half if you oven tray is small ) 
  4. Bake stirring the mixture every 15 minutes, especially in the corners of the baking tray where it tends to burn, for 45-50 minutes until golden brown. Allow the granola to cool completely in the tray, it will become crunchier as it cools. Stir in the cherries. Store in an airtight container.
