There was a birthday , which of course means there was cake !
I’ll post the recipe on my blog, because 
OMG !!! 
Ms S pronounced this “ the best best best cake ever” and I’m inclined to agree, wholeheartedly!
When I read the description of this recipe, I was When I read the description of this recipe, I was sold! “ This dish is not from India. I just made it up to feed my longing for Indian spices.” 
Well I couldn’t agree more, a longing for Indian spices is a perfectly good reason to make up a recipe.
In fact I’ve taken the same liberties with this recipe and made up a few variations of my own.
I’ve used chicken breasts, and chicken thighs ( Diana has a whole chapter dedicated to chicken thighs in the book) all are delicious and my kind of cooking. 

I love Diana Henrys books, and this one is no exception. In fact I would say it’s my favourite! 
The sub-title says it all,“ Simple Dishes That Look After Themselves”
YES PLEASE! 
As much as I love cooking, I’m often a lazy cook, and an even lazier cleaner upper ( I absolutely loathe washing dishes) SO dishes without dishes is a win for me. My review of the book which I listed as my top 5 of 2020, From Oven To Table”  is on my blog. It’s probably longer than it needs to be, I could just say, this recipe book belongs in your collection.

I’m desperately trying to get all the recipes typed up from the shoots I did in December.
I’m must admit it’s a part of my job I don’t really enjoy☺️ and tend to procrastinate even more than normal when I have to type,type,type 🙃
On the plus side, it’s a kinda-back-to-school day so with more routine in place there is less distraction and less opportunity to procrastinate!
All things work for the good right ?

I had the idea when I got my new @instantpot with the sous vide function. In December I was experimenting and tried this technique. 
Wow wow wow !
It’s my now my go to method to cook meat !
I’ll post the recipe on my blog.

Had Covid not crippled my plans I was to be on a European trip. 
My first in years. Solo. Exploring, visiting, eating ! And seeing my person Vanessa Lewis in Paris.
We had an itinerary for goodness sake ! 
I mean this was no “let’s hang out and see what happens visit “
No no, we had a LIST !
Places to go, things to do, food to be tasted, you know, ALL.THE.THINGS.
Including a Croque Monsieur, ( we share a love of all things cheese) at a little unremarkable bistro in a small side street, with a surly waiter, black and white checkered floor tiles, cane chairs, a marble table top during the day, and a stiff starched white cloth at night, real linen napkins ( yes please, and always no to paper napkins!) a glass of dry white wine for her,  and an Orangina for me. 
All the things.

As we start 2021 ( me 2 weeks later than everyone else, as I’m still trying to come to terms with what’s happened) I’m resolving today, even though I don’t believe in “resolutions “ as such, I’m still going to dream, and plan, to still have hope for the future. 
Even if it looks very different from before.
Welcome to 2021.
