Coconut, Lime & Lemongrass Popsicles

 1 can coconut milk
 4 limes, juice & zest
 4 sticks lemon grass, washed
 ¼ cup honey, optional

1. Whizz the coconut milk with the lime juice, half the zest and honey ( if using - I didn't because I like the refreshing tartness of the lime) in a blender
2. Pour into moulds and insert the lemon grass int the middle, use a peg to hold the lemongrass stick in place.
3. Freeze for 8 hours.
4.Serve garnished with extra lime zest.
