Spiced Apple Cake with Salted Caramel 

Serves 8

  • 2 Pink Lady® apples, or other crisp sweet apples 
  • 200g unsalted butter, at room temp 
  • 150g light brown sugar 
  • 50g honey 
  • 3 large free range eggs 
  • 250g self raising flour 
  • 1/2 teaspoon all spice 
  • 1 teaspoon ground cinnamon 
  • 1/2  teaspoon ground ginger 
  • Pinch of salt 

For the topping

  • 2 Pink Lady® apples, or other crisp sweet apples 
  • 1 tablespoon butter 

For the salted caramel 

  • 200g white sugar 
  • 100ml water 
  • 60g unsalted butter 
  • 120ml fresh pouring cream 
  • 1 tablespoon Maldon Sea Salt flakes 


  • Preheat the oven to 180˚C, and grease a 20cm round cake tin and line the base and sides with baking paper. Core and slice the apples, but do not peel, set aside in a bowl while you make the batter.
  • Using electric beaters, or in a stand mixer, cream the butter and sugar together until light and fluffy – about 3-4 minutes. Beat in the honey, then the eggs, one at a time. Sift the dry ingredients, and fold into the creamed mixture, don’t over mix as the cake will be dry. 
  • Pour the batter into the tin and arrange the sliced apple over the top. Bake for 1 hour or until set on top and a skewer inserted into the centre comes out clean (cover loosely with a sheet of foil after about 45 minutes if it starts to look too dark on top). Cool in the tin.
  • While the cake is cooling make the sauted apples; place apples and butter in a frying pan and saute over a medium heat for 8-10 minutes until slightly softened and golden.
  • To make the salted caramel; in a medium to large saucepan ( you need a bigger pot for evaporation) combine the water and sugar and cook over medium – high heat until the sugar is completely dissolved, about 5-8 minutes. Add the butter and stir to melt, reduce the heat slightly and gently pour in the cream, increase heat again whisk continually until thickened and caramel 8 – 10 minutes. Add seas salt. 
  • Remove from the spiced apple cake from the tin, and spoon over the apples and drizzle with salted caramel.
  • Serve with ice cream and extra caramel.
